Flourless bread? Without sacrificing taste? Yes and yes! Such a simple recipe yet is moist, flavorful, and a perfect “treat” for breakfast with a cup of coffee or tea. Apples and cinnamon both have high levels of antioxidants, and cinnamon actually helps stabilize blood sugar levels! Yay for flavor and health benefits!
Ingredients:
2 scoops vanilla protein powder
4 Tbsp ground flaxseed
2/3 cup egg whites
1 cup pureed apples/unsweetened applesauce*
1/2 finely chopped apples
1/3 cup chopped walnut pieces
2 Tbsp Stevia
1 tsp baking powder
1 Tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
Optional: 1-2 tbsp. sugar free maple syrup
* I had fresh apples that I finely chopped then blended to make my own applesauce. However, pre-made of course is an option as well.
Take all the ingredients but the chopped apples and walnuts and mix together until smooth even consistency. Pour into your (silicone) or well-sprayed loaf pan.
Then mix the apples and walnut pieces together (I usually add more cinnamon at this point 🙂 ) Pour slowly over the loaf, letting some of the mixture sink into the batter, but still leaving most on top for a nice top layer.
I bake my silicone loaf pan on a baking sheet at 350 F for about 30-35 minutes. Sometimes it takes longer depending on the depth of your pan. The middle of the loaf should be fully cooked and not gooey. Enjoy!!
