Peanut Butter Snack Bars π
Grain free, dairy free, delicious, *moist* and great for the whole family. Husband approved π
Ingredients:
1/4 cup almond flour
1/4 cup coconut flour
1/2 cup PB2 powder
1/3 cup Swerve sweetener (erythritol)
1.5 tsp baking powder
Dash of pink sea salt
1 serving (20-25g) protein powder: 1 scoop bone broth vanilla, grass fed whey vanilla (Gains in Bulk brand) or 2 small scoops collagen peptides powder
2 large organic free range eggs
1/2 cup (110g) canned pumpkin puree (can sub mashed banana)
50g (about 3 Tbsp) all natural peanut butter
1 tsp pure vanilla extract
1/2 cup unsweetened almond/cashew milk
Optional: cinnamon, cacao nibs, chocolate chips etc.
Directions:
Pre heat oven to 350F. In a large bowl, combine all dry ingredients. Add wet ingredients and mix well. Transfer to sprayed baking dish (I used a 8×8 glass Pyrex).
Bake at 350F for 30 minutes.
Let cool completely before cutting & enjoying!
Made 16 bars.
Recipe Note: You can also make these into muffins or mini muffins! They taste just as delightful π
