A very easy recipe that is perfect for holiday parties and a successful treat in my house. Festive yet healthy! This is technically the same recipe at the Peanut Butter Swirl Brownies but with a few changes 🙂
Makes about 25 bite size treats!
Ingredients:
1/2 cup oat flour (ground rolled oats in blender until flour)
1/2 cup Stevia
1/2 cup cocoa powder
1/2 scoop chocolate whey protein powder
1 tsp baking powder
1/4 tsp salt
1 egg
3/4 cup plain nonfat Greek yogurt
1/3 cup milk of choice (I use unsweetened almond milk)*
1/2 tsp peppermint extract
1/3 cup chocolate chips
3-4 tbsp peppermint candies or peppermint bark, crushed
Take all ingredients except chocolate chips and the peppermint candies and combine well in a large bowl. Pour the batter into a baking dish (with non stick spray or lined with foil). I used a 11 x 7 dish. Bake at 350F for about 25 minutes or until baked thoroughly.
When the brownies are baking, take your candies and crush them (I put them in a ziploc and used an icecream scoop :))
When the brownies are done, let them cool for a few minutes. At this point, take your chocolate chips and microwave them until they are melted into a thick, frosting-like consistency. Go slow with the microwave and stir frequently; chocolate burns easily! As soon as the chocolate was done, I gave the brownies a nice thin layer of “frosting” and sprinkled the crushed candies on top. Place your brownies in the fridge for the top layer to set before serving. Enjoy!
