1 Minute Chocolate Mug Cake
This is one of my favorite and easiest single serving desserts! This is great for when you get that chocolate craving but don’t want to (or won’t!) make a large batch of something sweet.
This recipe makes just 1 good-sized serving or 2 small servings. Fewer temptations! If you are looking for a full brownie recipe, you can grab that here: Fudgey Brownies
Thanks to the coconut flour, cocoa powder and protein powder, it contains fiber and protein! You can sub out the pumpkin for applesauce or mashed banana, but it won’t be as gooey!
1 Minute Chocolate Cake
(makes 1 big or 2 small servings)
- 1 Tbsp coconut flour
- ½ to 1 scoop protein powder (ideally grass fed collagen, bone broth or pea protein)
- 3 tbsp non dairy milk of choice (almond, oat, etc.)
- 1 tbsp DARK cocoa powder
- 2-3 Tbsp pumpkin puree
- 1-2 Tbsp granulated erythritol sweetener (or use monk fruit)
- ¼ tsp baking powder
- ½ tsp pure vanilla extract (optional)
DIRECTIONS:
In a small bowl, add all the dry ingredients and mix. Add the pumpkin and milk and mix again. It should be a fairly thick brownie batter consistency. Microwave 45-60 seconds. Let it cool ( I even like to place it in the freezer!) and then enjoy!
Optional toppings: berries, coconut whip, peanut butter, cacao nibs or crushed nuts
