This Cauliflower Garlic Bread is such a delicious alternative when you want something savory and hearty! Made without grains, gluten or dairy, this bread is light and fluffy with a great Italian flavor from the dried herbs. It tastes delicious with some grass fed butter, avocado, hummus or diced tomato!
INGREDIENTS:
3/4 cup almond flour
1/8 cup quinoa flour* (technically quinoa is a seed!)
1/2 TB baking powder
2 TB minced garlic
1 tsp sea salt
1 tsp Italian seasoning
1 tsp basil & oregano
1/2 tsp parsley
1 head cauliflower florets or cauliflower rice
4 eggs, separated
DIRECTIONS:
Pre heat oven to 350F.
In a large bowl, combine all dry ingredients. Crack eggs and separate the whites (to a small bowl) and yolks. Combine cauliflower and yolks & blend in nutribullet or Ninja until smooth. Add to dry ingredients & mix.
In the smaller bowl, use a hand mixer to whip the egg whites; use high speed until it forms peaks & white in color.
Fold into rest of mixture with a spatula (careful to not over mix!)
Line a loaf pan with parchment paper. Carefully transfer dough to the pan; sprinkle with parsley on top.
Bake for approximately 40 minutes or until golden brown.
Makes 12-16 slices!
Enjoy with some Kerrygold butter, avocado, hummus, tomatoes etc!
