This Coffee Cake is a new favorite in my house! My husband loves it, I love it, and it is a hit at a brunch event and with my clients as well!
This cake is soft, moist, sweet and the perfect little cake when you want a treat! It is Paleo, grain and gluten free, dairy free and sugar free! The applesauce and coconut yogurt give it a moist texture (no dry cake here!) without adding extra oil or fat as well.
It has a hint of apple, which you can totally increase on if desired. Want more apple flavor? Use all applesauce (about 150g total, little over 1/2 cup) add apple pie spice and more cinnamon! You can also add crushed walnuts, pecans or even diced apples 🙂
INGREDIENTS:
1.5 cups almond flour
1/4 cup coconut flour
2/3 cup granulated erythritol
1 tsp cream of tartar
1.5 tsp cinnamon
Dash of Himalayan sea salt
1 tsp baking powder and 1/2 tsp baking soda
1tsp pure vanilla extract
2 whole eggs (free range pasture raised)
90g (about 1/3 cup) unsweetened applesauce
90g (about 1/3 cup) unsweetened plain coconut yogurt (to keep dairy free) OR can use plain nonfat greek **may also omit and use all applesauce**
DIRECTIONS:
Pre-heat oven to 350F and line a 9×9 or 9×13 pan with parchment paper.
In a large bowl, combine all the dry ingredients and whisk well. In a smaller separate bowl, add the wet ingredients. Whisk by hand or use a hand mixer to combine well. Add the wet ingredients to the dry and combine again with a whisk or wooden spoon.
Transfer to your lined baking dish and spread evenly. Bake 350F for 35-40 minutes (Check at 30 minutes). Bake until a toothpick from the center is clean and the sides and top are slightly browned. Let it completely cool before cutting.
Frosting:
1/4 cup confectioners erythritol
Dash of almond milk (start with 1/2 TB)
Combine the erythritol and almond milk until desired consistency. Slowly drizzle over the cake, once baked and slightly cooled, in a criss cross fashion. Sprinkle gently cinnamon on top.
Full recipe makes approximately 24-26 squares (25 to 30 grams each)
