Ginger Asian Meatballs + Gluten Free Thai Peanut Sauce
This delicious asian-inspired recipe is all gluten free and uses all healthy ingredients. An extra plus is that it takes just 1 pan & can feed the whole family!
RECIPE:
Peanut Sauce:
1 cup light coconut milk
90g (about 6 TB) all natural peanut butter
2 TB coconut aminos
2 TB rice vinegar
2 TB water
1/2 TB chili paste or siracha
For the meatballs:
1 pound extra lean ground chicken (or lean ground turkey)
1 egg
2 TB coconut flour
2 TB garlic, minced
1 TB fresh ginger paste (or 1/2 TB dried ginger)
1/2 TB garlic chili paste or siracha
¼ teaspoon cayenne pepper
1/2 teaspoon salt & black pepper
1/4 cup finely dice green onion
1/2 sesame oil (could sub coconut oil) & 1 TB rice vinegar for cooking
DIRECTIONS:
In a large bowl combine all the ingredients for the meatballs. Form into golf size balls. *Other Option* Brown the meat + seasonings in the skillet (not making into balls)
Heat sesame oil in a large skillet. Cook the meat about 10 minutes at medium heat. Add the vinegar to pan when almost done & lower heat to simmer.
*Next time I’m just going to brown the meat + flavorings, not make into meatballs*
Next, prepare peanut sauce: Combine all ingredients in the same skillet or small saucepan. Simmer on medium low heat until fully combined.
When ready to eat:
Sautee mixed veggies in a skillet with coconut aminos & rice vinegar (to taste; I used about 1/4 cup) & optional peanut sauce.
Veggie Ideas:
Bell peppers
Riced cauliflower
Broccoli
Asparagus
Rainbow or Broccoli slaw
Zucchini
Fresh spinach greens
Serve with meatballs & top with Peanut Sauce.
Optional toppings: avocado, crushed walnuts, slivered almonds, sesame seeds…ENJOY!
