This Apple Crisp is such an amazing dessert treat! This crisp uses healthier ingredients like coconut oil, erythritol in place of sugar, and almond and coconut flour as the topping. It has a fantastic flavor, a yummy crumb topping and gooey apple filling.
This is a fantastic dessert during the holiday season that the whole family or party will enjoy! My favorite ways to enjoy it is with some coconut milk ice cream, coconut whipped cream or “cool whip” (So Delicious brand)!
INGREDIENTS: (Make approximately 8-10 servings)
Apple Filling:
4 apples roughly chopped (1lb, 16oz total) organic if possible
1/2 tablespoon (7g) coconut oil, softly melted
1 tablespoon cinnamon
1.5 tsp apple pie spice
⅛ tsp cloves nutmeg & allspice
1/4 cup granulated erythritol sweetener
Juice of half lemon
1/2 TB pure maple syrup
Crumble Topping:
3/4 cup (90g) almond flour
2 TB (15g) coconut flour
1/4 cup chopped pecans, walnuts or sliced almonds
1/2 cup erythritol
1/4 cup brown sugar erythritol (or more granulated)
3 tablespoons (45g) coconut oil, softened but not completely melted
1/2 TB pure maple syrup, molasses or honey
1 teaspoon cinnamon
Dash of salt
Few dashes of ginger & nutmeg
1/4 tsp apple pie spice
DIRECTIONS:
Dice up the apples and place into a large mixing bowl. Add the lemon over the apples and stir well (this helps prevent the apples from browning.)
Add the sweetener, spices and melted oil and mix well, until the apples are completely coated. Transfer to a square or rectangular Pyrex/Baking Dish that is greased on the bottom.
Using a large bowl ( can be the same one!) add the Crumble topping ingredients. Use a wooden spoon or spatula to combine the ingredients; it should be slightly moist after mixing. I use my hands to combine well so that it becomes the right consistency (you don’t want it too dry!)
Add the crumble topping evenly over the apples. Press down slightly once spread on top.
Bake 350F for 30 to 40 minutes. The crumble will be slightly browned on top and the apples will be baked through.
