What’s for Dinner tonight?! 😬
Many people find themselves unprepared when it comes to meal time. This can lead to stress, choosing fast & not always healthy options (aka takeout) Then you get frustrated of why you can’t “stick with it” or reach your goals.
So, how can you make healthy eating a breeze? Prepping food and meals ahead of time is a key Healthy Habit that makes for a successful week!
Sheet pan dinners are so convenient. All you do is put everything on a sheet & roast it all together! Serve immediately or it makes a great meal prep for the week! 👍
Making a weeknight dinner? Wash/cut/prep your ingredients ahead of time, then when it’s time, throw everything on your baking sheet.
This Recipe I call Autumn-Inspired Maple Dijon Chicken & Vegetables Chicken breast (or even chicken sausage) & root veggies, combined with a sweet/savory sauce is absolutely delicious! It is very easy as well, and can make several meals ahead of time!
RECIPE:
Ingredients (Approx 4 servings)
1/2lb (8oz) Brussel sprouts, halved
1lb (16oz) raw chicken breast (antibiotic, Hormone free, organic)
10oz delicata squash slices (or butternut, acorn quash)
5oz chopped organic apple
5oz yellow onion, sliced
Sauce:
1 TB pure maple syrup
2 TB Dijon mustard
1 tsp dried rosemary
1 tsp dried thyme
1 tsp garlic powder
1 tsp sea salt
2 TB water
1/2 TB Avocado Oil
Directions:
Line a baking sheet with parchment paper. Combine all sauce ingredients in a bowl or glass measuring cup & whisk together.
Combine onion, apple, squash & brussel sprouts in a large bowl & add 1/2 of the maple marinade. Mix well.
Add chicken breast to a bowl and add emaining sauce. Mix well & then add to the sheet. Place the veggies evenly on the sheet.
Drizzle any remaining sauce over chicken & veggies.
Roast at 375F for 40 minutes.
You can substitute different veggies, like carrots, beets, red potato or broccoli, if you prefer.
