Homemade 3 Ingredient Healthy Girl-Scouts SAMOA COOKIES
Raw,Vegan, Grain, Gluten and Dairy Free
Do you have a favorite Girl Scout cookie? Mine used to be Tagalong but the Samoa has taken its place. Thin Mints (from the freezer) are a close second!
But I can’t remember the last time I had a GS cookie…I just don’t buy them for several reasons.
Here are the INGREDIENTS in Samoas:
Sugar, vegetable oil (palm kernel, palm and soybean oil), enriched flour (wheat flour, niacin, reduced iron, vitamin B1 [thiamin mononitrate], vitamin B2 [ riboflavin], folic acid), corn syrup, coconut, sweetened condensed milk (milk, sugar), contains 2% percent or less of sorbitol, cocoa, glycerin, invert sugar, cocoa processed with alkali, cornstarch, salt, caramel color, dextrose, natural and artificial flavors, soy lecithin, sorbitan tristearate, leavening (baking soda, monocalcium phosphate), carrageenan 😳
Inflammatory oils, sugar & fake sugars, artificial chemicals, preservatives etc..nothing redeeming at all! They don’t look as delicious now…

MY VERSION:
There are only THREE ingredients in these no-bake cookies!! Dates, unsweetened coconut & dark chocolate 🤗
They’re: raw, gluten/grain & dairy free, plus vegan if using dairy free chocolate!)
And family approved!! 🙌🏼 Yes they still have sugar & calories. BUT they’re made with REAL whole food ingredients that contain some nutrients! These are still cookies/a treat, but know you’re eating FOOD vs chemicals!
INGREDIENTS:
1 cup (4oz) pitted dates
1 cup (60g) unsweetened coconut flakes
1/4 cup (60g) dark chocolate (I used a 85% bar)
1/2 tsp coconut oil
Optional: 1/2 TB pure maple syrup
DIRECTIONS:
Toast the coconut on a baking sheet by broiling it for 3-5 min, or until golden brown.
Combine dates and coconut in a Ninja or food processor. Blend on high until because combined and soft dough consistency. If not sticky enough, stir in syrup by hand.
Scoop into TB balls (measured mine at 20g weight) and flatten gently. Use a straw & gently poke a hole through the middle. Place on parchment lined baking sheet in freezer.
Heat (in microwave at 15 sec increments) the chocolate & oil until melted.
Dip the bottom of the cookies in chocolate until it forms a bottom “layer” then place on parchment paper. Repeat with remaining cookies. Lastly, drizzle the remaining chocolate with spoon on top of cookies.
Place in freezer to set.
Store in freezer or fridge. Makes 8 cookies.
