HEALTHY PB & J BARS
Have a craving for your childhood favorite? Make these for when you want that comfort food! This bar recipe is very similar to my PB Snack Bars, but with the addition of berries to make it PB&J!
I have made these 2 ways (you can see in the photos). First, I made the bar layer and put the berry layer on top. Second time, I layered the berries in between layers of PB batter. The choice is yours, both came out tasting delicious!
This recipe is grain, gluten, sugar and dairy free. You might be able to use flax eggs & a plant based protein powder to make it vegan (but I have not tried myself). This is a fantastic treat for adults AND kids!
INGREDIENTS:
PB Bar Layer:
1/4 cup (28g) almond flour
1/4 cup (28g) coconut flour
1/3 cup granulated erythritol sweetener
1 scoop (25g) grass fed bone broth protein powder
1/3 cup (approx 40 grams) PB2 powder
1 tsp baking soda
1 tsp aluminum free baking powder
1/2 tsp pure vanilla extract
2 whole eggs (free range organic)
1/4 cup (60g) unsweetened applesauce
1/3 cup unsweetened almond/cashew/coconut milk
PB layer:
32g (2 Tbsp) all natural peanut butter; OPTIONAL: mixed with 2 tbsp granulated erythritol and 20g (about 2 Tbsp) PB2 powder
Berry topping:
1 cup (140g) organic blueberries (fresh or frozen; could sub other berries)
DIRECTIONS:
Pre-heat oven to 350F and line a 9×9 Pyrex or metal baking dishwith parchment paper. In a large bowl combine the dry ingredients for the PB bar layer. In a separate bowl, beat the eggs and wet ingredients together. Add the dry to the wet, with a whisk or hand mixer. Heat your berries and mash until becomes of a jam consistency (or to your liking).
Option 1: Transfer to your batter to the baking dish, drizzle your PB “layer” into a swirl formation and then bake at 350F for 20 minutes. THEN once cooled for a few minutes, add teh mashed berries on top and spread gently again. Bake at 350F for an additional 10-15 minutes.
Option 2: Transfer half of the batter to the baking dish, swirl in your PB layer, gently layer the berries on top, then add the remaining batter on top. Bake for 350F for 30-35 minutes.
Let it completely cool (key here!) before cutting and enjoying! Store them in the fridge or freezer!
