These muffins follow my same “base recipe” but with a tropical delicious twist! Hope you enjoy!
INGREDIENTS:
1/2 cup ground flax
3/4 cup coconut flour
2 tbsp almond flour
3/4 cup granulated erythritol
75g collagen peptides or other protein powder
1/4 cup unsweetened coconut, shredded or flaked
2 tsp baking powder
Dash sea salt
100g (1 medium) banana
100g diced pineapple
1 whole egg
3 egg whites
1/2 cup unsweetened almond or coconut milk
1 tsp pure vanilla extract
DIRECTIONS:
Mix all dry ingredients together. With a hand mixer blend the liquid ingredients, then add to the dry. Mix together well.
Transfer to parchment paper muffin liners or into a large baking dish lined with parchment paper.
Bake at 350F for approx. 25 min, up to 30 min total.
Makes 24 muffins!
