Savory Pumpkin Hummus
What I love about pumpkin is how versatile it is. It can sweet or savory, great ingredient for baking, sauces, etc. This Pumpkin Hummus is smoky/savory & lots of good flavor. I like it with cucumbers, bell peppers or some gluten free crackers.
RECIPE INGREDIENTS:
1 can (14 ounces) organic chickpeas, drained and rinsed (ideally in BPA free can)
⅔ cup (150 grams) pumpkin puree
2 tablespoons tahini
2 TB minced garlic
1 whole lemon juiced (2 tablespoons)
1 ½ tablespoon extra virgin olive oil
½ teaspoon cumin
½ teaspoon sea salt
1/2 tsp dried parsley
¼ teaspoon pumpkin pie spice
1/4 teaspoon paprika
DIRECTIONS:
Combine all ingredients in a high powered blender or food processor. Blend until smooth! Store in a glass jar or container in the fridge for up to 10 days. You may also save and freeze!
