These no-bake little pumpkin pie bites are the perfect little treat! They’re slightly sweet and a tad “spicy” with the different pumpkin and fall flavors. They’re great for the whole family and very easy to make as well. They’re grain and gluten free, dairy free, sugar free, low carb and Paleo approved!
INGREDIENTS:
1/4 cup coconut flour
2 scoops (50g) quality vanilla protein powder; I use Bone Broth or Grass Fed Whey
2 TB erythritol granulated sweetener (ie Swerve or Anthony’s brand)
Spices to taste: Pumpkin pie spice, cinnamon, ginger, nutmeg. I like 1/2 tsp PP spice, 1/2 tsp cinnamon, 1/4 tsp each ginger and nutmeg
32g (2 TB) natural nut butter (I prefer almond for this recipe)
60g (1/4 cup) pure pumpkin puree
Optional: 1 tsp pure maple syrup or molasses
DIRECTIONS:
In a small to medium bowl, add dry ingredients and whisk together. Add remaining wet ingredients and mix again with a spatula. It will turn into a sticky dough, wet enough to mold into balls, but shouldn’t stick to your hands. Form into 10g balls (using a food scale). Store in the fridge for a week, or place in freezer.
Optional add-ins: crushed walnuts or pecans, raisins or cranberries, mini chocolate chips
