This is a delicious dish to have in the Fall months, and makes an exceptional side to your holiday meal. The savory and sweet flavors combined with the different textures make this so delicious! I personally enjoy this all year round. It is a great side to a hearty entree like a chicken breast, but also tastes great as a “hash” mixed with eggs and squash!
INGREDIENTS:
1 pound Brussel Sprouts, chopped in half & ends cut off
6 slices bacon (all natural, nitrate and hormone free)
1 medium organic apple, finely chopped
1/2 Tbsp avocado oil, butter or ghee
1 tsp sea salt
1 tsp dried rosemary
1/2 tsp black pepper
DIRECTIONS:
Roast Brussel sprouts on a baking sheet with the oil at 375F for 20-25 minutes, or until they are golden brown & slightly crispy. You may also use an Air Fryer (approx 375F fr 10-12 minutes).
While the sprouts are been roasted, cook bacon strips on stove top (approx 5 minutes). Transfer to a plate & save 1/2 of the bacon grease. When cooled, chop them into fine pieces.
Add the apples to the pan with the remaining bacon grease. Cook on medium/medium low heat for a few minutes, until soft & tender.
When the Brussel sprouts are done, combine with bacon & apples in large bowl. Mix well then transfer to serving dish. Enjoy immediately or store in fridge.
