Superfood Granola Bars
These “Paleo” inspired protein bars are easy and delicious for the whole family! They are similar to my Oatmeal Protein Energy Bites but in a baked bar form. They are gluten free, dairy free, low in sugar, uses whole food ingredients AND packs much more protein & fiber than a traditional packaged granola bar. Make these on your rotation and they won’t disappoint! Enjoy!
INGREDIENTS:
1/2 cup of each of the following:
Organic gluten free oats (40g)
Coconut flour & Ground flaxseed (30g)
2 Tbsp (15g) hemp hearts (or sub more seeds)
1/4 cup granulated erythritol or monk fruit sweetener (optional)
70-80g collagen or bone broth protein powder
Cinnamon, ginger, vanilla extract (approx 1 tsp each, to taste)
1/4 cup dried unsweetened cranberries (I order these online)
1/4 cup pepitas or sunflower seeds (omit or use more hemp hearts)
6 Tbsp (100g) all natural nut or seed butter
1/3 cup (50g) unsweetened applesauce (could sub pumpkin or banana)
1/2 to 1 Tbsp water
Other optional add ins: unsweetened shredded coconut, cacao nibs or mini chocolate chips, chopped nuts
DIRECTIONS:
Pre heat oven to 350F.
Mix all dry ingredients in a large bowl. Add the wet (applesauce, nut butter, honey) and stir well. Slowly add water, 1/2 tbsp at a time. Use your hands and mix well into a large ball of dough. Careful to not make it too wet.
My tip: Wet your hands & roll into a large ball, then place on parchment paper. Start pressing down by hand & spreading to approx 1/4 inch thick. I prefer using a rolling pin that’s slightly damp so the dough doesn’t stick.
Once it’s spread out evenly to your desired size, bake at 350F for 10 minutes. Let them cool before cutting into approx 16 squares.
