Turkey Squash Brussel Sprout Hash
This has become one of my favorite dishes! I will have it as a entree (works great for any meal!) and will be a great side to a holiday get together. Add an egg to make it more for “breakfast” or some greens and avocado as a savory sweet meal.
INGREDIENTS:
- 1 lb Extra Lean Ground Turkey
- 4-6 slices nitrate free bacon
- 1 tsp Cinnamon
- 2 tbsp Poultry Seasoning (or “Thanksgiving spice blend”)
- 1 tbsp Avocado Oil
- 1 cup Red Onion (diced)
- 2 Tbsp minced garlic
- 2 cups Brussels Sprouts (trimmed and halved)
- 2 cups Butternut Squash (peeled and cubed)
- 2 medium sized Apples (cored and diced)
- 1/2 tsp Sea Salt
DIRECTIONS:
- Heat a large skillet over medium heat. Add the ground turkey, cinnamon and poultry seasoning. Cook for 5 to 7 minutes, until thoroughly browned, breaking up into little pieces as it cooks. Drain off the fat, transfer to a bowl and set aside.
- In a separate smaller skillet, cook your bacon strips for approximately 5-7 minutes.
- In the same skillet, heat the oil over medium heat. Add the onion and garlic, sauteeing until translucent. Next add the brussels sprouts, butternut squash, and apples. Cover and cook for about 10 minutes, stirring occasionally, until all veggies are soft.
- Add the ground turkey back into the skillet and stir to combine. Add the bacon and the bacon grease and mix all together. Divide into servings and enjoy!
NOTES:
- Make sure to use high quality animal products; nitrate free bacon and antibiotics, humanely raised organic meats.
- You may substitute ground chicken, lean (93/7) ground turkey or chicken sausage links.
- You may opt out of the meat/bacon completely to make vegetarian.
- You can substitute a different squash like acorn or delicata.
- Tip: Buy frozen cubed (pre roasted) butternut squash! Look in the freezer section of your grocery store to save time on prepping the squash ahead of time.
- Add egg whites or an egg for a savory breakfast or brunch option.
- Tip: You may cook/roast your brussel sprouts for a few minutes ahead of time, as they take longer than the other vegetables to cook.
- Enjoy as a savory breakfast dish, lunch or dinner entree, or a side to your holiday meal!
